Kiss your can goodbye… this homemade tomato basil soup recipe is so creamy and heartwarming you won’t even need a grilled cheese!
4 cups onion, diced
2 cups carrots, peeled and diced
8 large tomatoes, skinned, seeded and chopped
2 cups lightly packed basil
8 cups canned diced tomatoes
½ tsp white pepper
8 cups veggie broth
¾ cup butter
2 tsp. salt. Optional, taste before you add, usually you don’t need it.
1 tbsp sugar
Melt butter over medium heat. Add onions and carrots, cook until transparent. Stir in tomatoes, basil, sugar and white pepper. Bring to a boil, stirring constantly. Reduce heat and simmer covered 10 minutes. Cool, put in blender in small amounts and puree. Return to pot, add broth and salt.
