Garden Fresh Salsa Fresca

Use the bounty from your garden to create a delicious and spicy salsa! With tomatoes, tomatillos and serrano peppers, this recipe is sure to please your palate!


Makes about 4 to 5 cups

  • 4 large tomatoes
  • 5 tomatillos, husks removed
  • 4 cloves garlic
  • 4 serrano peppers, stems cut off
  • ¼ white onion, minced
  • 2 T finely chopped cilantro
  • Juice of 1 lime
  • 2 t salt

Put the tomatoes, tomatillos, garlic and peppers on a griddle or a Comal and turn the stove on high heat. Char on all sides. Place the tomatillos, garlic and peppers into a blender with the lime juice and salt. Blend until smooth. Add the tomatoes and pulse the blender until the tomatoes are diced into small pieces. Do not over blend. Remove from the blender and stir in the onion and the cilantro. Serve immediately or freeze for later!
